Zesty Meatloaf
Ingredients
- 2 pounds meat loaf mixture (ground beef, veal, and pork)
- 2 cups home made bread crumbs
- 1 small onion, minced
- 1/2 cup milk
- 2 eggs
- 2 Tbs. Red Pepper Jam
- 2 Tbs. Tomato paste
- 1 tsp. Mustard, ground
Directions
- Preheat oven at 400 degrees. Combine all ingredients and mix well.
- Form into loaf or pack into lightly greased loaf pan. Bake 40 to
45 minutes. Top with sauce.
- SAUCE
- Remainder of 4 ounce Tomato paste.
- 1-cup hot water
- 1 Tbs.
- 2 tsp. sugar
- Combine all ingredients. Heat to boiling. Pour over meat loaf in
loaf pan (or casserole). Allow to sit for 10 minutes before
slicing.
