Peach-Rasberry Butter Cookies (makes 6-8 dozen)

Ingredients

  • 2 sticks butter, softened
  • 3 heaping tbsp. Sugar
  • 2 tsp. Almond extract
  • 2 3/4 cups sifted flour
  • Peach-Raspberry Jam
  • Pecan halves
  • Powdered Sugar

Directions

  1. Cream butter and sugar until fluffy. Add almond extract and flour. Mix well. Pinch dough and roll into balls about 1 inch round.
  2. Arrange on cookie sheet. Make dent in each ball, and fill with a little jam.
  3. Place pecan half on top.
  4. Bake at 350 degrees for 15-20 minutes. Remove and cool.
  5. Roll in powdered sugar.
